Mezze maniche with broccoli cream sauce is such an easy, light and tasty vegan pasta dish that, once tried, it will become one of the workhorses of the winter season: it takes very little to prepare this economical, healthy and nutritious recipe!

Broccoli is a member of the cruciferous (or brassicaceous) family, a category of vegetable that is not a favourite with many people – young or old. Used as a condiment for pasta, in a tasty creamy sauce, it will make any broccoli-detractor think twice. If, on the other hand, you are already a fan of this vegetable… this is the pasta dish for you!

But broccoli – as you know – has only one negative side: the smell they give off when cooked. This is why cooking them outdoors, in a Palazzetti kitchen, will allow you to bring a delicious, sustainable and nutritious first course to the table, without a single downside! Ready to discover how to prepare broccoli cream mezze maniche with crunchy bread and toasted hazelnuts?

Difficulty: easy

Preparation: 5 minutes

Cooking time: 15 minutes

Serves: 4 people

INGREDIENTS

  • 320 g mezze maniche
  • 50 ml oat milk
  • 1/2 clove of garlic
  • A pinch of smoked paprika
  • 50 g hazelnuts

  • q.b. of extra virgin olive oil and salt

PROCEDURE

  1. Bring plenty of salted water to the boil, then plunge in the chopped broccoli and cook for 5 minutes.
  2. Drain the broccoli in a bowl of water and ice; due to the heat shock, it will remain bright green.
  3. Drain from the water and whisk the vegetables together with the oat milk, a small piece of garlic, smoked paprika and extra virgin olive oil; season with salt.
  4. Cook the pasta in the same cooking water as the broccoli.
  5. Meanwhile, coarsely chop the stale bread and hazelnuts, toast with a little oil in a non-stick frying pan. Set aside.
  6. Drain the mezze maniche al dente and toss them in the frying pan together with the broccoli cream and a couple of ladles of the pasta cooking water.
  7. Serve the broccoli cream mezze maniche and make it even more wonderful with a sprinkling of crunchy bread and toasted hazelnuts. Enjoy!
