Apple fritters – the Carnival recipe

Difficulty: easy

Preparation: 10 minutes

Cooking time: 15 minutes

Servings size: 6 people (12 pancakes)

INGREDIENTS

  • 200 g 00 flour
  • 120 ml milk
  • 2 eggs
  • 2 tablespoons caster sugar
  • The grated zest of 1 lemon
  • A pinch of salt
  • 7 g baking powder
  • 3 apples
  • A pinch of cinnamon powder
  • The juice of 1/2 lemon
  • a pinch of high oleic seed oil
  • a pinch of icing sugar

METHOD

  1. Start with the apples: peel them, slice them (about 1 cm thick, no more) and remove the core.
  2. Drizzle the apple slices with lemon juice and a sprinkling of cinnamon. Stir gently so as not to break the slices.
  3. In a bowl, sift the flour and baking powder, add the milk, stirring lightly with a whisk.
  4. Break the eggs into the batter, add the sugar, pinch of salt and lemon zest. Mix without whipping: just blend the ingredients together. The batter should be quite thick and free of lumps. If you have time, you can let the batter rest in the fridge for 30 minutes, so it will be even easier to form the apple fritters.
  5. Dip the apple slices into the batter a few at a time, turning them over until they are completely covered.
  6. Heat the seed oil to 170°C (if you don’t have a cooking thermometer, simply insert a bamboo skewer into the oil: as soon as it emits bubbles, the oil is at temperature); cook a few apple fritters at a time, turning them halfway through cooking, a couple of minutes is enough to brown them perfectly.
  7. Drain on paper towels and, when frying is finished, transfer to a serving dish and sprinkle with icing sugar.
  8. The apple fritters are ready for snacking!

Don’t want to fry? You can also bake apple fritters in the oven! Simply place the fritters on a baking tray lined with greaseproof paper and bake at 180°C on the medium-low side of the oven for about 25 minutes. Once they are browned, take them out of the oven, let them cool and sprinkle with icing sugar!
