Fennel-flavoured salmon: a quick and easy recipe

According to the calendar, summer has come to an end but these sunny days and warm temperatures suggest otherwise. We still feel like eating light, healthy food: tasty and easy-to-prepare fennel-flavoured salmon is on the menu today!

It’s quick and easy to make (it cooks in just 15 minutes). The secret for obtaining perfect results is to choose excellent ingredients and a good barbecue.

Excellent results will also be obtained by cooking on a stone slab:  Bioplatt is the perfect tool for this. It’s a large soapstone slab that accumulates heat and stores it for a long time, releasing it slowly and evenly.

Broiling on stone isa method that locks in all the flavour of any food with no need to add extra cooking oils.

Here’s a tip for all those who decide to cook their salmon on a Bioplatt slab: to make cleaning your slab quick and easy, just remove any food from it while it is still hot with a sharp, wide knife or scraper!

Fennel-flavoured salmon: the recipe

Ingredients for 4

  • 1 whole salmon
  • 4 tablespoons of oil
  • Juice of ½ lemon
  • 1 teaspoon of fennel seeds
  • Salt and pepper to taste
  • To garnish (optional): aniseed, fennel leaves or chervil and/or a few slices of lemon

Method

  1. Prepare a marinade by mixing oil, salt, pepper, lemon juice and fennel seeds.
  2. Clean and wash the salmon thoroughly.
  3. Make a deep cut on each side of the fish so that the marinade can be better absorbed.
  4. Marinate for one hour, turning the salmon from time to time, then remove it and drain it gently to avoid damaging the meat.
  5. Cook it at medium temperature on a grill or Bioplatt slab.
  6. Flip it over once only and brush it with the marinade 3 or 4 times.
  7. Once cooked (it will take about 15 minutes) lie the salmon gently on an oval serving dish and garnish with fresh herbs – such as aniseed, fennel leaves or chervil – and a few thin slices of lemon.
