Mozzarella in carrozza, finger food always in vogue

A great classic of Italian cuisine. A finger food from yesteryear, a delicious recipe that everyone agrees on and which never goes out of fashion. Yes, we are indeed talking about the very royal mozzarella in carrozza which in English literally means ‘mozzarella in a royal carriage’ !

If just hearing the name makes your mouth water, then it’s time to learn the recipe, so you can spoil yourself whenever you feel like it.

The recipe for mozzarella in carrozza

Do you know the history of this dish? Probably not, so while we are looking for the necessary ingredients in the pantry we will tell you the origin of this delicacy with such a strange name.

It would seem that the birth of mozzarella dates back to the Middle Ages, when milk produced on the Neapolitan plain was transported by slow means of transport and on bumpy roads, reaching its destination having already turned sour. The dairies therefore began to separate off the curd, thus obtaining the ingredient that we appreciate so much even today.

Mozzarelle in carrozza would therefore seem to have been born to ennoble this ingredient and obtain a richer and more nutritious dish. At the time, typical slices of bread would have been round resembling the wheels of a carriage from which everything had originated: and so this is how the name came about!

INGREDIENTS (serves 4)

  • 8 slices of soft sandwich bread
  • 8 slices of mozzarella
  • 1 sprig of tarragon
  • 1 or 2 eggs
  • yellow flour
  • salt as desired
  • pepper as desired

METHOD

  1. Place a couple of slices of mozzarella between two slices of sandwich bread with some sprigs of tarragon, together with a little salt and pepper.
  2. Make sure that the mozzarella doesn’t protrude beyond the edges of the bread.
  3. Press the bread all around the edge to close it as much as possible.
  4. Beat the eggs with a little salt and then coat the slices of bread stuffed with mozzarella cheese first into the egg (we recommend a certain generosity especially around the edges) and then into the yellow flour so as to obtain your classic batter consistency.
  5. Cook it all on the grill or on a Bioplatt over a sustained heat until the mozzarella in carrozza is golden brown (but not burnt!) on both sides.

VARIATIONS

Two classic variations which have a Venetian origin are the addition of anchovies or ham.

You too can have fun trying to create new original combinations, but if you want to be sure to meet the expectation of all your guests simply stick with the basic recipe, which is already a masterpiece as it is.
