Herby peppers and aubergines are simple to make but they are such a tasty side that they make the perfect complement to any dish. This recipe requires very few ingredients: herbs are the secret that gives a special touch to the traditional pepper and aubergine side.   The result will be very impressive, both for the eyes and the taste buds.   A colourful side with an intense flavour, perfect to complement meat or fish courses, but it can even be enjoyed by itself for a light lunch. We recommend this pepper and aubergine recipe to complete our herby hamburger  dish! The simple yet tasty side will let you save lots of time when you want to organise a lunch or dinner for your friends. You can easily cook this dish the day before you need it and it is perfect even served cold. You can sauté these vegetables in a pan or cook them in the oven but the best results are achieved on a griddle (nothing can beat a barbecue!). No more idle talk, our mouths are watering so it’s high time to grab our recipe!

Thyme-infused peppers and aubergines: recipe

Ingredients

  • 2 peppers (1 red and 1 yellow)
  • 2 aubergines
  • extra virgin olive oil
  • lots of aromatic herbs (choose from thyme, basil, chives and parsley)
  • salt
  • pepper
  • 1 teaspoon of balsamic vinegar

Method

  1. Slice the peppers, remove the seeds, and cut the aubergines into 1-cm thick slices.
  2. Grill at average-high temperature for about 10 minutes, flipping over once only.
  3. Put the grilled vegetables in a serving dish and season with salt, pepper, aromatic herbs and extra virgin olive oil.
  4. Add a few drops of balsamic vinegar and mix.
  5. Leave to rest for about half an hour so that the vegetables can fully absorb the flavour of the herbs.
