The festive season is over but we can still treat ourselves to food worthy of a king! The starter we are about to show you is very stunning but, surprisingly, it’s also very easy to prepare. To thoroughly enjoy your gourmet dish, you will need quality ingredients, your Palazzetti grill and good company.

Scallops with pancetta: the recipe

INGREDIENTS

  • 16 large scallops
  • 10 tablespoons of extra virgin olive oil
  • 1 lemon
  • 10 pink peppercorns
  • 16 thin slices of smoked pancetta
  • 4 tablespoons of breadcrumbs
  • salt and pepper

METHOD

  1. Take the scallops out of their shells, clean and wash them accurately.
  2. In a bowl, prepare an emulsion of lemon juice, peppercorns and a pinch of salt.
  3. Put the scallops in a plate, pour the marinade over them and leave to soak for 30 minutes.
  4. Drip the marinade off and wrap the scallops in the pancetta slices. Skewer in place with one or more skewers.
  5. Grill them on each side for 4 minutes, brushing them with the marinade now and again.
  6. Serve as preferred.
Need some serving ideas? You can serve 3-4 scallops on a kebab using 2 skewers for each scallop like we’ve done here for this recipe or you can take the scallops off the skewers when they are ready and arrange each one on a slice of grilled bread and melted butter! How about the wine? This dish is not easy to pair but you can never go wrong if you choose a bottle of bubbly!
