Asparagus and feta quiche is a delicious recipe that makes the most of this wonderful springtime delicacy. A tasty, nutritious and balanced savoury dish, perfect for spring: it will create a great impression, even with vegetarian friends!                                            The ingredients are few and simple. We have enhanced the classic combination of eggs and asparagus with an extra touch of flavour: Greek feta cheese, which best balances the strong aromaticity of the asparagus and the delicacy of the eggs.

Eclectic as can be, green asparagus and feta quiche is well suited for a quick dinner, as an appetiser for a garden lunch, for lunch at the office or as the highlight of an outdoor picnic.

Very easy to prepare, original and tasty, we are sure that this vegetarian quiche will quickly become one of this season’s favourites.

Green asparagus quiche with feta cheese – the quick and easy recipe

INGREDIENTS (serves 4)

  • A packet of rectangular puff pastry
  • About ten fresh green asparagus
  • 1 small shallot
  • 3 eggs
  • 100 ml cooking cream
  • 100 g feta cheese
  • extra virgin olive oil, salt and black pepper as desired
  • fresh parsley as desired


  1. Wash the asparagus, remove the leathery end if necessary. Cut the stalks into rounds, setting the heads aside.
  2. Sauté the asparagus slices in a frying pan with the chopped shallots and a little oil. Add salt and cook for about 15 minutes.
  3. In the meantime, prepare the filling for the asparagus quiche: beat the eggs, season with salt and pepper and add the cream.
  4. Once everything is mixed together, add 3/4 of the amount of coarsely chopped feta and the fried asparagus slices.
  5. Place the puff pastry in an oven dish. Pour the filling evenly inside.
  6. Cut the asparagus heads kept aside lengthwise; use them to decorate the quiche.
  7. Season with salt and pepper, complete with a drizzle of oil and bake in a preheated oven (preferably in the lower part, so that the bottom of the quiche is nice and crispy) at 180°C for about 30 minutes.
  8. Remove from the oven and decorate with the feta cheese kept aside and a few sprigs of fresh parsley. Your green asparagus quiche with feta cheese is ready to be enjoyed! Bon Appetit!
