Chiffon cake and marble cake are among the classics of American baking tradition: very easy to prepare and difficult to get wrong, which lend themselves to many interpretations. We have decided to combine the best of the two recipes, coming up with a fluffy lactose-free cake with cocoa and coconut, delicious, flavoursome, nutritious and light.

The result is a delicious marbled doughnut shaped cake. The main feature of a marble cake is that it is made from two different mixtures (in this case one with cocoa and the other with coconut), which are then mixed together to create the cake’s dual-coloured marble effect.

A wonderful delight of sweetness, soft, fluffy and fragrant, perfect for breakfast or as a snack. This cake can be enjoyed “as is“, simply dusted with a little icing sugar, or filled with whatever you like, giving way to your imagination.

This special marbled chiffon cake can in fact be transformed into a sumptuous dessert. It can become a special base for a birthday cake if covered in icing; you can try frosting it with chocolate ganache or serve it filled with whipped cream; or even have it with ice cream … the choice is yours! Whichever option you go for, it will be wonderful in all its guises.

Marble chiffon cake: the lactose-free cake with cocoa and coconut – the recipe

INGREDIENTS (serves 8)

  • 6 large egg whites
    • 1 pinch of salt
    • margarine to grease the mould as required

For the coconut chiffon cake mixture:

  • 3 egg yolks
  • 60 ml corn oil
  • 100 ml water
  • 150 g sugar
  • 8 g of vanilla yeast for cakes
  • 125 g of 00 flour
  • 20 g of coconut flakes

For the cocoa chiffon cake mixture:

  • 3 egg yolks
  • 60 ml of corn oil
  • 100 ml of water
  • 150 g of sugar
  • 8 g of vanilla yeast for cakes
  • 125 g of spelt flour
  • 20 g of bitter cocoa powder


  1. Start with the mixture for the cocoa and coconut lactose-free cake: in a bowl mix together the 00 flour, sugar, baking powder and coconut flakes.
  2. The second step is to mix all the dry ingredients for the lactose-free cocoa cake mixture: so in a second bowl mix together the flour, sugar, baking powder and cocoa.
  3. Set both bowls aside.
  4. Now arrange three bowls on the work surface: crack the eggs and place the egg whites in the first, three yolks in the second and three yolks in the third.
  5. Add 60 ml of oil and 100 ml of water to the yolks in the second bowl, mix well, then gradually incorporate the contents of the dry coconut mixture, stirring with a whisk.
  6. Do the same in the third bowl: add 60 ml of oil and 100 ml of water, mix well, then whisk in the dry cocoa mixture.
  7. All that’s left is to whip the egg whites with a pinch of salt until stiff.
  8. Mix half the beaten egg whites into the coconut mixture, using slow motions from the bottom up.
  9. Add the other half to the cocoa mixture; stir gently, keeping the mixture as light as possible.
  10. Now it’s time to transform a classic chiffon cake into its marbled version! Proceed as follows: grease your favourite cake mould with margarine, put two tablespoons of coconut mixture on the bottom, then two of cocoa on top, continue alternating the two mixtures.
  11. Once finished, bake in preheated oven for 50/60 minutes at 160°C (do the toothpick test, the baking time will depend a lot on the depth of the mould).
  12. Once ready, take the lactose-free cake with cocoa and coconut out of the oven. Wait a few moments and, being careful not to burn yourself, flip the mould. Let the marble chiffon cake cool and serve with a dusting of icing sugar and a scattering of edible flowers.
