The BBQ season and al fresco meals are back again at last! A great classic on these occasions is the pie, but if you want a new recipe to surprise your friends and relatives, our macaroni pie should do the trick!

A pie that combines short macaroni pasta with the shape of a pie for a starter that makes everyone happy.

For our macaroni pie we have paired ham and smoked pancetta with spinach in a medley of spring tastes and colours.

Let’s get the ingredients ready and switch the stove on.

Macaroni pie: the recipe


  • 700 g bread dough
  • 350 g macaroni
  • 200 g ham
  • 200 g boiled and drained spinach
  • 100 g smoked pancetta
  • 150 g milk
  • 20 g plain flour
  • 100 g onion
  • 100 g grated Parmesan cheese
  • 2 eggs
  • 100 g butter
  • salt, pepper and nutmeg to taste


  1. Season the boiled and drained spinach in a pan containing a garlic glove and 50 g butter. Mix in the flour and add the milk and cook until thickened i.e. for about 10 minutes.
  2. Remove the garlic clove, chop the onion and cook in a pan until soft, add the thinly-slice pancetta and cook again for a few minutes.
  3. Add the spinach and then the ham, cut into strips, the Parmesan cheese and the eggs. Add this mixture to the cooked and drained macaroni.
  4. Roll out a very thin layer of bread dough which will be used to line the bottom of a slightly-greased earthenware pan.
  5. Put the macaroni mixture in the pan and press down hard to distribute the it evenly over the surface. Use the remaining dough to cover the pie and prick it with a fork so that the steam can escape through the holes.
  6. Bake covered for about 45 minutes.


You can replace the bread dough with puff or shortcrust pastry which will make your pie a bit more substantial but just as tasty!
