When autumn is in full swing, the kitchen is filled with warm aromas, enveloping textures and surprising combinations that retain their natural simplicity. Tomino cheese with double pumpkin, mandarin and gremolada – the autumn recipe

INGREDIENTS
- One small violin pumpkin
- 2 mandarins
- 1/2 teaspoon of ginger
- A pinch of sweet paprika
- A bunch of parsley
- 2 tablespoons of mixed seeds (pumpkin, sunflower, sesame)
- 4 tomini
- Sage and rosemary to taste
- Extra virgin olive oil, salt and pepper to taste
PREPARATION
- Remove the skin from the pumpkin, take a portion and, using a slicer, mandolin or vegetable peeler, cut into thin strips.
- Transfer to a bowl and season with the juice of one mandarin, grated ginger, paprika, salt and oil; mix and leave to marinate for at least 1 hour.
- Meanwhile, dice the remaining pumpkin, transfer to a baking tray and season with the chopped herbs, salt and oil; bake at 180°C for 25 minutes.
- Once roasted, transfer to a blender and blend to a cream. Add a drizzle of oil and a dash of boiling water to achieve the right consistency.
- Now it’s time for the gremolada: chop the parsley and seeds together, transfer to a bowl and add the juice and zest of a mandarin, salt and oil; mix.
- All that remains is to sear the tomini in a pan until they are golden brown on the outside and perfectly melted on the inside.
- Assemble the dish by placing the pumpkin cream on the base, topped with the hot tomino, the marinated pumpkin, the gremolada sauce and a few seeds. A sprinkling of pepper and… ready to serve! Bon appetit!
